At Lincolnshire Poacher Cheese, we are absolutely committed to producing the very best cheese that we possibly can (with a little help from our 230 Holstein Fresian Cows!) using our own fresh unpasteurised milk and traditional methods. The Bourne family has been hand-making fine Cheshire cheese since 1750, and since 1930 at the Bank Farm. Unlike many other cheese makers who use industrial production methods, we still use traditional 'hands on' techniques to produce cheeses which have been awarded gold, silver and bronze medals at the British Cheese Awards, prizes at the Nantwich International Cheese Show and Gold and Silver Medals at the World Cheese Awards.

Cheesemakers of Canterbury

Our cheese is made from unpasteurised British Freisan cows milk at the newly refurbished Dargate dairy site, Lamberhurst farm near Canterbury. The farmhouse cheddar-like hard cheese is made by hand using an old smallholders recipe that has been perfected over the last 25 years. The cheese is moulded and pressed in muslin for 3 days and is then unwrapped and allowed to mature on pine shelves for at least 4 months. Each cheese is continually turned and tended during this time.
