Cheesemakers of Canterbury
Our cheese is made from unpasteurised British Freisan cows milk at the newly refurbished Dargate dairy site, Lamberhurst farm near Canterbury.
The farmhouse cheddar-like hard cheese is made by hand using an old smallholders recipe that has been perfected over the last 25 years. The cheese is moulded and pressed in muslin for 3 days and is then unwrapped and allowed to mature on pine shelves for at least 4 months. Each cheese is continually turned and tended during this time.

The Courtyard Dairy
The Courtyard Dairy is a unique, specialist cheese-shop and cheese-maturer, owned and operated by Andy and Kathy Swinscoe. In 2017 the shop expanded into new premises and at the same time a museum telling the history and story of farmhouse cheese, a café serving cheese-based dishes (and, of course, coffee!), and a cheese production room were added, alongside plenty of free on-site parking. The shop itself has become a renowned destination shop, where regulars and visitors alike enjoy the opportunity to sample and purchase some of the finest cheese to be found in Europe, whilst benefiting from Andy and Kathy’s comprehensive and entertaining cheese knowledge.

The Ethical Dairy
We produce traditional cheeses made with unpasteurised organic milk sourced from our own dairy herd, where we keep the calves with their mothers to suckle. Rainton Farm is the first commercial dairy in the UK to be following the cow with calf method, others are all micro dairies. Our ethical dairy model is based around treating the animals, the land, our environment and the people who work here with respect and kindness.
